EGG SCRAMBLE WITH PUMPKIN

INGREDIENTS:

  • 100g​ - whole eggs (x2)

  • 80g - High Protein Bulla Cottage Cheese

  • 100g​ - Egg Whites

  • 35g ​- Eat Lean Shredded Cheese

  • 200g​ - Roasted Pumpkin

  • 50g​ - Spinach or Rocket leaves

  • Mingle seasonings for added flavour

METHOD:

In a bowl, add the eggs, egg whites and cottage cheese. Whisk together until combined.

In a non stick pan, add the egg mixture and sprinkle the cheese over the top. Cover with a lid on low heat for 1-2mins then begin to scramble until the eggs are cooked to your liking. Add Salt & Pepper and any ‘mingle seasonings you like)

Add the roasted pumpkin to warm and serve in a bowl or plate. Enjoy!

Optional - Add a dollop of greek yogurt on the top (not included in the calories)
