EGG SCRAMBLE WITH PUMPKIN
INGREDIENTS:
100g - whole eggs (x2)
80g - High Protein Bulla Cottage Cheese
100g - Egg Whites
35g - Eat Lean Shredded Cheese
200g - Roasted Pumpkin
50g - Spinach or Rocket leaves
Mingle seasonings for added flavour
METHOD:
In a bowl, add the eggs, egg whites and cottage cheese. Whisk together until combined.
In a non stick pan, add the egg mixture and sprinkle the cheese over the top. Cover with a lid on low heat for 1-2mins then begin to scramble until the eggs are cooked to your liking. Add Salt & Pepper and any ‘mingle seasonings you like)
Add the roasted pumpkin to warm and serve in a bowl or plate. Enjoy!
Optional - Add a dollop of greek yogurt on the top (not included in the calories)
