CRUNCHY CREAMY CHICKEN SALAD - CALORIES:399 / P:55g F:8g C:30g

INGREDIENTS:

The Chicken

  • 120g - Cooked Chicken Breast

  • 100g - Celery

  • 100 - Carrot

  • 40g - Red Onion

  • 15ml - Lemon Juice

  • 1g - Salt & Pepper

The Sauce

  • 150g - Non Fat Greek Yogurt

  • 15g - Parmigiano Reggiano Cheese

  • 10g - Dijon Mustard

  • 1.5g - Garlic Powder

  • 1.5g - Onion Powder

  • 1g - Salt & Pepper

  • 15ml - Lemon Juice

  • 3.5g - Chopped parsley

METHOD:

Shred the cooked chicken breast and place in a large bowl. Add diced celery, grated carrot, diced red onion, lemon juice and season with salt & pepper, then mix to combine.

In a separate bowl, mix together the greek yogurt, grated cheese, dijon mustard, garlic powder, salt, pepper, lemon juice and parsley until smooth.

Pour the dressing over the chicken mixture and stir until everything is evenly coated. Enjoy!
