Cookie Dough Eggs
Ingredients
Cookie Dough Filling
1 1/2 cups almond flour
1/4 cup cashew butter or peanut butter
1/4 cup maple syrup
2 tablespoons coconut oil, melted
1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 cup chocolate chips
Chocolate Shell
150 to 200g dark chocolate, melted
Method
In a bowl, combine almond flour, nut butter, maple syrup, melted coconut oil, vanilla and salt. Mix until a soft cookie dough forms. Fold through the chocolate chips.
Spoon a small amount of melted chocolate into each cavity of a mini Easter egg mould and brush or tilt the mould so the chocolate coats the sides. Place in the fridge for about 5 to 10 minutes until set.
Add a small spoonful of the cookie dough filling to each chocolate shell.
Cover the filling with more melted chocolate to seal the eggs.
Return the mould to the fridge until fully set, then gently pop the Easter eggs out of the mould.
Repeat until you have used up all of the chocolate and cookie dough.
Store in the fridge until ready to serve.
